Snack Box Lunch

Our nutritious and light Snack Box Lunch Recipe is the perfect meal prep for busy days, offering freshness and a satisfying mix of protein, fibre, and crunch to keep you fueled on the go — enjoy!

Ingredients

5 small apples, sliced
5 small 4-inch pitas
5 large eggs, hard-boiled
5 cup cucumber, sliced

2½ cup baby carrots
5 tbsp. hummus
5 Pinches of salt

Instructions

1. In an air-tight container, add ½ cup of baby carrots, 1 cup of cucumber slices, 1 small apple, 1 large hard-boiled egg, 1 small pita (cut into triangles), and 1 tablespoon of hummus (added in the corner of the container or in a separate smaller air-tight container).

2. Copy that breakdown with 4 other air-tight containers.

3. Once all the containers are made, store them in the fridge until you're ready to enjoy one.

4. When you're ready to eat, top the cucumber and hard-boiled egg with some salts, and dig in.

Tip

If you slice the apples ahead of time, be sure to sprinkle some lemon juice on them to prevent the browning. You can also add a dash of cinnamon powder to the apple slices to hide the browning, and it's a natural metabolism booster for a little extra boost! However, you can also just eat the apple whole or slice it right before you dig in.
