Simple Shrimp Mango Salad

Our Simple Shrimp Mango Salad is a refreshing, metabolism-boosting meal packed with lean protein, hydrating fruits and veggies, and a zesty dressing—enjoy!

Ingredients

25 oz. fresh or thawed shrimp
10 cup lettuce, washed & chopped
5 cup mango, peeled & diced
5 cup cucumber, sliced
2½ cup onion, sliced
1¼ cup mint leaves
5 tbsp. jalapeno, diced

5 tbsp. lemon juice
2 tbsp. butter
5 tsp. olive oil
5 tsp. honey
1½ tsp. sesame oil
Pinch of salt
Pinch of pepper

Instructions

1. Melt the butter in a large pan over medium-high heat.

2. Once the butter is melted and the pan is hot, add in the shrimp, seasoning it with salt and pepper.

3. Cook the shrimp for 4 to 6 minutes, stirring frequently, until it's opaque and pink.

4. Once the shrimp is cooked, remove them from the pan, and set them aside to cool.

5. In a small air-tight container, whisk together jalapeno, olive oil, lemon juice, honey, sesame oil, and a pinch of salt to make the dressing.

6. In 5 different air-tight containers, place 2 cups of lettuce, 1 cup of mango, 1 cup of cucumber, ½ a cup of onions, a ¼ cup of mint leaves, and a fifth of the cooked and cooled shrimp.

7. Once the salads and dressing are made, store them in the fridge until you're ready to enjoy a serving.

8. When you're ready to enjoy a serving, pour a fifth of the dressing onto the salad, and shake everything together.

9. Once the serving of salad is fully dressed, dig in, and enjoy!
