1. Melt the butter in a large pan over medium-high heat.
2. Once the butter is melted and the pan is hot, add in the shrimp, seasoning it with salt and pepper.
3. Cook the shrimp for 4 to 6 minutes, stirring frequently, until it's opaque and pink.
4. Once the shrimp is cooked, remove them from the pan, and set them aside to cool.
5. In a small air-tight container, whisk together jalapeno, olive oil, lemon juice, honey, sesame oil, and a pinch of salt to make the dressing.
6. In 5 different air-tight containers, place 2 cups of lettuce, 1 cup of mango, 1 cup of cucumber, ½ a cup of onions, a ¼ cup of mint leaves, and a fifth of the cooked and cooled shrimp.
7. Once the salads and dressing are made, store them in the fridge until you're ready to enjoy a serving.
8. When you're ready to enjoy a serving, pour a fifth of the dressing onto the salad, and shake everything together.
9. Once the serving of salad is fully dressed, dig in, and enjoy!
