1. Preheat oven to 375°F, melt 1tablespoon of butter in a large skillet over medium-high heat, and bring a large pot of salted water to boil.
2. Once the skillet is hot, add the carrots, onions, and celery, cooking for 5 to 8 minutes.
3. After that time, add in the garlic, turkey, and spices, cooking for 10 to 15 minutes.
4. Once the pot of salted water is boiling, add in the potatoes, and boil for 10 to 15 minutes.
5. Once the turkey is cooked, add in the tomato paste, coconut aminos, broth, and spinach, letting cook and simmer for 10 to 15 minutes.
6. Once potatoes are boiled and soft (you should be able to easily pierce with a fork), strain them, return them to the pot, add in 2 tablespoons of butter and milk, and mash or blend together using a masher or a handheld blender.
7. Once the turkey mixture is cooked, press it into the bottom of the skillet, top it with the mashed potatoes, and place it in the oven for 20 to 25 minutes.
8. Once baked, remove it from the oven and let it cool for 10 to 15 minutes, top it with the parsley, then serve, and enjoy!
