1. Preheat the oven to 425°F.
2. Combine chili powder, paprika, cumin, onion powder, dried oregano, cayenne pepper, salt, and pepper together in a bowl.
3. Slice the chicken, peppers, and onions, and place them in a Ziploc bag along with the minced garlic.
4. Sprinkle most of the seasoning mixture into the plastic bag over the chicken and veggies, along with the olive oil, then seal the bag and shake everything together.
5. Line a sheet pan with parchment paper.
6. Once the oven is hot and the chicken and veggie mixture is evenly coated, spread the mixture onto the parchment paper, sprinkling it with the remaining seasoning.
7. Then place the sheet pan in the oven to cook for 15 to 20 minutes.
8. Once cooked, remove the sheet pan from the oven and let cool for 5 to 10 minutes.
9. During that time, wrap the tortillas in foil and place them in the warm oven, but turn it off.
10. Once the fajita mixture is cooled sprinkle it with cilantro and spritz it with lime juice, then serve it alongside the warm fajitas.
