Light Mac & Cheese

Our Light Mac & Cheese is a protein-packed, portion-friendly twist on classic comfort food for a satisfying yet smart snack or side dish—enjoy!

Ingredients

16 oz. cavatappi, uncooked
12 oz. evaporated milk (1 can)
8 oz. mozzarella cheese, grated
8 oz. colby jack cheese, grated
4 oz. cheddar cheese, grated
1 cup milk
3 tbsp. butter

3 tbsp. flour
1 tbsp. dijon mustard
1 tsp. garlic powder
1 tsp. smoked paprika
½ tsp. salt
½ tsp. pepper

Instructions

1. Bring a large pot of salted water to a boil and heat a large skillet over medium-high heat.

2. Once water is boiling add pasta and cook according to package instructions.

3. Once the pasta is cooked, set it aside.

4. Once the skillet is hot, add the butter, and stir in the flour, garlic powder, smoked paprika, salt, and pepper.

5. Then, slowly add the milk, evaporated milk, dijon mustard, stirring constantly for 5 to 7 minutes until it thickens.

6. Once the sauce is thicker and creamy, remove the skillet from heat and stir in all the cheese until it's melted.

7. Once you have the cheese sauce made, add in the cooked pasta and toss everything together.

8. Once all the noodles are coated in the sauce, serve it, and dig in!

Tip

At first, the pasta sauce may seem really runny, but after you toss the pasta in the sauce let it sit for a bit. The sauce will thicken around the noodles as it cools!
