Mini Veggie Sandwich Snack Box

Our Mini Veggie Sandwich Snack Box makes meal prep easy and nutritious, offering five perfectly portioned servings packed with fresh veggies, protein-rich mozzarella, and wholesome almonds for a balanced, on-the-go snack—enjoy!

Ingredients

50 almonds
10 slices diet bread
5 oz. mozzarella cheese, sliced
5 cup blueberries

2½ cup cucumber, sliced
2½ cup spinach
2½ cup baby carrots
2½ tbsp. fat-free mayonnaise

Instructions

1. To make a sandwich, take 2 slices of diet bread, spread ½ a tablespoon of fat-free mayonnaise on one slice, then top it with ½ a cup of spinach, then ½ a cup of cucumber slices, 1 ounce of mozzarella slices, and then finish the sandwich by topping it with the last slice of bread.

2. Repeat Step 1 until you have 5 sandwiches made, then place them in 5 separate containers.

3. In each container, add 10 almonds, 1 cup of blueberries, and ½ a cup of carrots, along with the sandwich.

4. Once all the containers are compiled, store them in the fridge, and pull one out when you're ready to enjoy it.
