Shrimp & Cauliflower Fried Rice

Our flavourful Shrimp & Cauliflower Fried Rice is a low-carb twist on a classic dish that's packed with protein and nutrients, while also supporting a healthy digestion—enjoy!

Ingredients

10 oz. shrimp
4 cup cauliflower rice
1 tbsp. garlic, minced
1 tbsp. hoisin sauce
1 tbsp. rice vinegar

½ tbsp. ginger, grated
2 tsp. vegetable oil
Splash of lime juice
Pinch of salt

Instructions

1. Heat 1 teaspoon of vegetable oil in a large skillet (the largest skillet or pan you have) on medium heat.

2. Once the skillet is hot, add in the cauliflower rice, sprinkle it with a little salt, and cook, stirring occasionally, for 5 to 10 minutes.

3. After that time, remove cooked cauliflower rice from the pan, place it in a bowl, and set it aside.

4. Return the pan to heat and add in the remaining vegetable oil.

5. Once the oil is hot, add in the garlic and ginger, cooking for 1 to 2 minutes.

6. Once fragrant, add in the shrimp and let cook for 2 to 3 minutes, stirring occasionally.

7. Once the shrimp is mostly cooked, add in the hoisin and vinegar, and let cook for another 1 to 2 minutes.

8. After that time, add in the cauliflower rice and toss everything together.

9. Once everything is combined, divide the contents into bowls, and dig in!
