Sheet Pan Roasted Chicken, Broccoli & Sweet Potato

Our hearty and healthy Sheet Pan Roasted Chicken, Broccoli & Sweet Potato Recipe is perfect for busy weeknights or make-ahead meal prep, as it's seasoned with Cajun spices, roasted to perfection, and ready in no time — enjoy!

Ingredients

25 oz. chicken breast
5 cup broccoli florets
3¾ cup sweet potato, chopped
2½ tbsp. Cajun seasoning

1¼ tbsp. garlic, minced
5 tsp. olive oil
Pinch of pepper
Pinch of salt

Instructions

1. Preheat oven to 425°F and line a baking sheet with aluminum foil or parchment paper.

2. While the oven heats, place the chicken in a Ziplock bag with the Cajun seasoning and 2 teaspoons of olive oil, and then seal the bag, toss everything together, and let it marinate.

3. Then, place sweet potatoes on the baking sheet, drizzle with 2 teaspoons of olive oil, sprinkle with salt and pepper, and then bake for 15 minutes.

4. After that time, remove the baking sheet from the oven, push the sweet potato to one side, add the broccoli florets to the sheet (drizzle with 2 teaspoons of olive oil and sprinkle with salt and pepper), along with the chicken, and place it back in the oven to bake for another 20 to 25 minutes. You can also use 2 baking sheets if one is too crowded!

5. After that time and the chicken is cooked through (internal temp of 165 °F), remove the sheet from the oven, let it cool for a few minutes, and then serve and enjoy!

Tip

For meal prepping, once everything has cooked and cooled, place 5 ounces of chicken, 1 cup of broccoli, and ¾ a cup of sweet potato in 5 air-tight containers, and then store in the fridge. When ready to enjoy, warm a serving in the microwave for a few minutes, and then dig in!
