Leftover Turkey Soup

Our comforting, light, and nutritious post-Thanksgiving Leftover Turkey Soup is the perfect way to enjoy a hearty, wholesome meal while making the most of your holiday leftovers — enjoy!

Ingredients

6 cup chicken broth
13½ oz. leftover turkey, chopped (white and dark meat)
1 cup coconut milk
½ cup onion, diced
½ cup celery, chopped
½ cup carrot, chopped
½ cup brown rice

¼ cup flour
2 tbsp. butter
1 tsp. dried rosemary, crushed
1 tsp. dried thyme, crushed
Pinch of pepper
Pinch of salt

Instructions

1. Bring a large pot to medium-high, then add in butter, carrots, celery, onion, thyme, and rosemary, cooking and stirring for 3 to 5 minutes.

2. Once cooked and fragrant, add in broth, rice, salt, and pepper and let simmer for 20 to 30 minutes, stirring regularly.

3. After that time, whisk together the milk and flour, then slowly pour it into the soup, and let cook for another 5 to 10 minutes to thicken.

4. Finally, add in turkey, turn heat down to low, and let the turkey warm up for another 5 to 10 minutes.

5. Once the soup is mixed and hot, serve, and enjoy!
