Kung Pao Broccoli & Shrimp Stir-Fry

Our weight-loss-friendly Kung Pao Broccoli & Shrimp Stir-Fry Recipe is a guilt-free twist on a takeout classic that's packed with a lean protein, a nutrient-rich vegetable, and a spicy, tangy sauce — enjoy!

Ingredients

5 oz. shrimp, peeled, deveined, & tails removed
½ cup broccoli florets
2 tbsp. shallots, minced
1 tbsp. garlic, minced

2 tsp. chili flakes
2 tsp. hoisin sauce
2 tsp. vegetable oil
1 tsp. rice vinegar

Instructions

1. Preheat oven to 400°F and toss broccoli in half the vegetable oil.

2. Once the oven is hot, place broccoli on a baking sheet and roast for 15 to 20 minutes.

3. While the broccoli roasts, heat a wok over medium-high heat.

4. Once the wok is hot, add in the vegetable oil, shallots, and garlic, and cook for 1 to 2 minutes.

5. Add in the shrimp and cook for 2 to 4 minutes.

6. Then, add in the vinegar, hoisin sauce, and chili flakes bringing it to a bubble.

7. Once bubbling, add in the roasted broccoli and let blend for 3 to 5 minutes, until sticky.

8. Once everything is cooked and sauced, remove the wok from heat, serve the stir-fry, and enjoy!

Tip

Enjoy the stir-fry with ½ cup of cooked rice, which would add 1 Starch allotment to the 1 serving meal.
