1. Preheat the oven to 350°F and line a baking dish with parchment paper.
2. Place the oats and peanuts on the baking dish, and toast for 8 to 10 minutes, stirring halfway.
3. While the oats and peanuts toast, combine the honey, butter, sugar, vanilla, and salt in a pan over medium heat for 5 to 8 minutes, stirring regularly.
4. Once everything is toasted and melted, combine them all together in a mixing bowl, ensuring everything is well blended.
5. Let the granola bar mixture cool for 5 to 10 minutes.
6. Once cool, stir in the cranberries and the chocolate chips.
7. Once everything is mixed together, pour it into the baking dish with fresh parchment paper.
8. Be sure to really press the granola bar mixture into the baking dish, you want it to be fully stuck together.
9. Once the bar mixture is fully pressed together, cover the baking dish, and place it in the fridge for a minimum of 2 hours.
10. Once the mixture has been in the fridge for a while, remove it, place the mixture on a cutting board, and cut it into 12 bars.
11. Once the bars are cut, store them in an air-tight container in the fridge for a few weeks, or dive in and enjoy one!
