1. Heat the olive oil in a skillet over medium-high heat.
2. Pat beef chunks dry with a paper towel, and then season with salt and pepper.
3. Once the skillet is hot, add the beef chunks cooking for 5 to 10 minutes, stirring occasionally.
4. After that time, remove the beef from the skillet and set aside in a bowl.
5. Return the skillet to heat and add in onions and garlic, cooking for 2 to 3 minutes.
6. After that time, add in tomato paste and Worcestershire Sauce, mixing everything together well.
7. Once everything is well combined, add everything into the slow cooker, except the parsley, and stir together.
8. Cover the slow cooker and cook the stew on high for 5 hours or on low for 8 hours.
9. After that time, remove the bay leaves, divide the stew into serving bowls, garnish with parsley, serve, and enjoy!
