Grilled Greek Salmon Kebabs

Savour the flavours of our Grilled Greek Salmon Kebabs, which make a healthy and delicious barbecued summer dinner — enjoy!

Ingredients

30 oz. skinless salmon
1 cup bell peppers, cut into squares
1 cup red onion, cut into squares
1 lemon, zested & juiced
3 tbsp. garlic, minced

2 tbsp. olive oil
1½ tbsp. fresh dill, chopped
1½ tbsp. dried oregano
Pinch of salt
Pinch of pepper

Instructions

1. Pat salmon dry with a paper towel and then cut into 1 to 1½-inch cubes.

2. In a larger bowl, mix together lemon zest, lemon juice, olive oil, garlic, half the dill, all the oregano, salt, and pepper.

3. Place the salmon cubes in the lemon marinade bowl, tossing them together until the salmon is fully coated.

4. Let the salmon marinate for 20-minutes, while you cube the peppers and onions.

5. If you're using wood skewers, this is also the perfect time to soak them in water; however, if you're using metal skewers, you can skip this step.

6. Once salmon is marinated, vegetables are chopped, and skewers are ready, start building your kebabs by alternating pepper, onion, and salmon.

7. Once the kebabs are constructed, preheat the grill to 400°F.

8. Once the grill is hot, place kebabs on the grates and cook for 12 to 16 minutes, flipping once during that time.

9. Once cooked, remove the kebabs from the grill, garnish with remaining dill, serve, and enjoy!

Tip

Serve alongside 6 tablespoons of tzatziki (1 tablespoon per serving), for some extra creaminess, which would add 1 Extra allotment per serving.
