Foil-Packet Scallops For 1

Our Foil-Packet Scallops recipe is a simple yet flavourful dish that makes a wonderfully light and protein-packed meal that's easy to clean up and deliciously healthy — enjoy!

Ingredients

5 oz. scallops
3 cup leafy greens (spinach, arugula, swiss chard, etc...)
2 tsp. butter

1 tsp. olive oil
Pinch of salt
Pinch of pepper

Instructions

1. Preheat oven to 400°F and line a baking sheet with aluminum foil.

2. Place the leafy greens in the middle of the lined baking sheet and drizzle with olive oil.

3. Place the scallops on top of the leafy greens and cover each with an even amount of butter, salt, and pepper.

4. Close aluminum foil, so there is a sealed packet on the baking sheet.

5. Place the baking sheet in the hot oven and cook for 15 to 20 minutes.

6. After that time, remove the baking sheet from the oven, and let cool for 3 to 5 minutes.

7. Transfer the scallops and greens to a plate, serve, and enjoy!

Tip

For a more filling meal, serve the scallop and greens on ½ cup of cooked rice, which would add 1 Starch to the allotments.
