Easy Cottage Cheese Egg Bites

Our Easy Cottage Cheese Egg Bites are a low-carb snack or breakfast that'll give you a boost of calcium and muscle-building protein while being super simple to make as you just have to mix, bake, and enjoy!

Ingredients

8 eggs
5 oz. cheddar cheese, grated
1 cup spinach, chopped
1 cup onion, diced

1 cup cottage cheese
Pinch of salt
Pinch of pepper
Non-fat cooking spray

Instructions

1. Preheat the oven to 350℉ and spray a muffin pan with non-fat cooking spray.

2. In a blender, combine eggs, cheddar cheese, cottage cheese, salt, and pepper.

3. Once the egg mixture is well blended, pour it into 10 muffin slots, and then top them with the chopped spinach and diced onion.

4. Once the "muffins" are prepped, place them in the hot oven to bake for 20 to 25 minutes.

5. Once cooked, remove the egg bites from the oven and set aside to cool for 5 to 10 minutes.

6. Once cooled, place 2 egg bites in 5 different air-tight containers, and then store them in the fridge.

7. When ready to enjoy 2 bites, you can eat them cold or heat them up in the microwave for 1 to 2 minutes.

Tip

Top your eggs with Frank's Hot Sauce to some heat and switch things up! Adding Frank's to your egg bites will not affect your allotments because it's a  Freebie allotment.
