Asparagus & Shrimp Stir-Fry

Our Asparagus & Shrimp Stir-Fry is a quick and delicious choice for busy weeknights, as it can be ready in just 20 minutes, bringing fresh flavours, lean protein, and vibrant veggies to your table in no time — enjoy!

Ingredients

20 oz. shrimp, peeled & deveined
4 cup asparagus, trimmed & chopped
¼ cup water
2 tbsp. vegetable oil
1 tbsp. oyster sauce

1 tbsp. fresh ginger, grated
½ tbsp. chili flakes
2 tsp. garlic, minced
Pinch of salt

Instructions

1. Heat a wok or large sill over medium heat.

2. Once hot, add the oil and garlic, cooking for 1 to 2 minutes.

3. Add in the shrimp, chili flakes, and salt, cooking for 2 to 3 minutes.

4. Once cooked, remove the shrimp and garlic from the wok and set aside in a bowl.

5. Return the wok to heat, and once it's hot again, add ginger and asparagus, cooking for 2 to 3 minutes.

6. After that time, return the shrimp and garlic to the wok, so everything is together, and add in the oyster sauce and water.

7. Let the sauce reduce and thicken slightly, in the hot wok for 2 to 5 minutes.

8. After that time, serve, and enjoy!

Tip

For a more filling meal, serve the stir-fry on a bed of rice, a ½ cup of cooked rice per serving, which would add 1 Starch allotment to your count.
