1. Preheat oven to 400°F and line a baking dish with parchment paper.
2. While the oven heats, combine chicken, egg, breadcrumbs, 2½ tablespoons of soy sauce, green onions, ginger, garlic, olive oil, pinch of pepper, and pinch of salt in a large bowl.
3. Once the chicken mixture is well combined, divide the chicken into 20 1-inch balls, and place them in the lined baking dish.
4. Once all the chicken balls are made, place them in the oven to cook for 20 to 25 minutes.
5. While the chicken balls cook, whisk together a ¼ cup of soy sauce, honey, vinegar, sriracha, and toasted sesame oil in a large mixing bowl to make a sauce.
6. When the chicken balls are done cooking, remove them from the oven, and let them cook for 5 to 10 minutes.
7. Once cooled, place the chicken balls in the large mixing bowl with the sauce and gently toss everything together until they're fully coated.
8. Serve 4 chicken balls on ½ a cup of rice with ½ a cup of broccoli, or divide the same amounts into 5 different air-tight containers and store them in the fridge for later.
