BBQ Chicken Skewers

Grilled chicken breast with herbs and spices on bamboo skewers which is guaranteed to be a crowd pleaser — try it on your next get-together!

Ingredients

20 oz (600 g) raw boneless-skinless chicken breast
1⁄4 cup (50 ml) BBQ sauce (lower calorie/lower sodium)
1-2 Tbsp (15-30 ml) hot sauce
2 Tbsp (30 ml) water

2 green peppers
1 medium white onion
4 packets of brown sugar artificial sweetener
Kabob skewers

Instructions

1. Cut chicken into cubes.

2. In a small bowl, combine hot sauce, water, sugar substitute, and half the BBQ sauce. Toss chicken in marinade to coat.

3. Cut green peppers and onion into 1-inch squares.

4. Alternate chicken, pepper, and onion squares on skewers.

5. Grill on a barbecue set at medium-high heat OR place in 400°F (200˚C) preheated oven.

6. While cooking, brush the remaining BBQ sauce over skewers.

7. Cook for approximately 10-15 minutes or until chicken is no longer pink.
