Mediterranean Chickpea Salad

Our refreshing and flavourful Mediterranean Chickpea Salad is the perfect dish to meal prep for lunch or dinner as it's loaded with healthy and vibrant goodness — enjoy!

Ingredients

3¾ cup chickpeas, drained & dried
1½ cup cherry tomatoes, halved
1¼ cup red onion, chopped
1¼ cup cucumber, quartered
¾ cup parsley, chopped
5 oz. feta cheese

1½ tbsp. balsamic vinegar
5 tsp. olive oil
2 tsp. lemon juice
1 tsp. salt
1 tsp. pepper

Instructions

1. Combine chickpeas, tomatoes, red onion, cucumber, and feta together in a bowl.

2. In a separate bowl, whisk together balsamic vinegar, olive oil, lemon juice, salt, and pepper to make the dressing.

3. Pour the dressing over the vegetables and toss.

4. Once tossed, separate salad into 5 air-tight containers, top with chopped parsley, seal, and then store in the fridge.

5. When ready to enjoy, give the container a shake, open it up, put it in a bowl or on a plate, and enjoy!
