Maple Salmon & Mashed Potatoes

Our savoury and sweet Maple Salmon & Mashed Potatoes Recipe makes a hearty and balanced meal that’s easy enough for weeknights yet elegant enough for special occasions — enjoy!

Ingredients

4 5-oz. salmon fillets
4 small potatoes, peeled & chopped
¼ cup vegetable broth
4 oz. low-fat sour cream
3 tbsp. garlic, minced
2 tbsp. soy sauce

2 tbsp. butter
2 tbsp. fresh parsley, chopped
4 tsp. maple syrup
Pinch of salt
Pinch of pepper

Instructions

1. Prep salmon at least 30-minutes before cooking by removing it from the refrigerator and placing it skin side up in a baking dish.

2. In a small bowl, combine maple syrup, soy sauce, 1 tablespoon of garlic, salt, and pepper together.

3. Pour the marinade onto the salmon, then cover and place it in the refrigerator for 30 minutes, flipping halfway through.

4. Preheat oven to 400°F and place potatoes, remaining garlic, salt, and cold water in a pot, and bring to a boil, cooking for 10 to 12 minutes.

5. Once cooked, transfer the potatoes to a stand mixer or bowl to use a hand blender, adding in butter, remaining garlic, vegetable broth, sour cream, salt, and pepper, and combine.

6. Once the oven is hot, remove the salmon from the oven, make sure it's skin side down, and place it in the oven to bake for 20 to 25 minutes.

7. Once the potatoes are mashed and the salmon is cooked, assemble them on a plate together, garnish with the chopped parsley, serve, and enjoy!

Tip

Serve the dish with a lemon wedge to make the flavours of the salmon and potatoes pop! This squirt of lemon juice will not affect your allotments.
