1. Heat grill to 400°F.
2. While the grill heats, mix together sour cream, most of the cilantro, mayo, garlic, lime juice, chili powder, lime zest, pepper, and salt in a bowl and set aside.
3. Once the grill is hot, place the corn directly on the grates for 3 minutes.
4. Repeat the process, grilling all sides of the cob for 3 minutes, until it's nicely browned.
5. Once fully grilled, remove from heat and place on a serving plate.
6. Top the corn with the creamy sauce, crumbled cheese. and remaining cilantro.
7. Once your corn is dressed, serve, and enjoy!
