1. Bring a medium pot of salted water to a boil.
2 Once boiling, add the chopped cauliflower to the pot for approximately 12 minutes, or until soft, and then stain it.
3. Once the cauliflower is strained and cooled slightly, wring it out in a kitchen towel or paper towel to remove even more moister.
4. Return the "dried" soft cauliflower to the pot, and mash it together with the cheese, sour cream, garlic, margarine, salt, and pepper.
5. Once your cauliflower is mashed to your preferred texture, top it with the chives, stirring them into the mash slightly if you'd like, then serve!
