1. Preheat oven to 400°F.
2. Pat cod dry and let it get to room temperature.
3. Spray a little baking dish with non-stick cooking spray.
4. Place the lemon slices on the bottom of the baking dish, then place the fish on top of the slices, with the cherry tomatoes and potatoes sprinkled around it.
5. On the stove over light heat, melt butter and combine with garlic powder, tarragon, and salt.
6. Spread the butter mixture over the cod, with a little reserved for the tomatoes.
7. Once the oven is hot and the cod is ready, place the baking dish in the oven and cook for 15 to 18 minutes.
8. Once cooked, remove the fish from the oven, serve, and enjoy!
