1. Place cheesecloth, paper towel, or dish towel in a bowl.
2. Then place shredded potatoes on the cloth of choice, then pull the corners of the cloth together and twist, so you strain out some of the liquid from the potatoes.
3. Transfer dry potatoes to a bowl, and add onion, egg, and breadcrumbs to mix together.
4. Heat up frying pan on medium-high heat.
5. Once hot, add avocado oil to the pan, enough to coat the whole bottom.
6. While the oil heats, make mini potato mixture patties with your hands, trying to keep the patties a similar size.
7. Once patties are made, place them in the hot pan and flatten them with a spatula.
8. Fill the pan with flattened potato patties, but don't overcrowd, and cook for 3 to 4 minutes per side.
9. Once cooked, they'll have a golden-brown color, then transfer the latkes to a paper towel-lined plate to absorb some of the excess cooking oil.
10. Repeat these steps until all the potato mixture is done.
11. Once all latkes are cooked, serve them and enjoy them!
