Grilled Vegetable Skewers

Our vibrant Grilled Vegetable Skewers are marinated in a zesty Greek-inspired blend of olive oil, lemon, garlic, and oregano for a healthy and delicious veggie-forward meal — enjoy!

Ingredients

4 oz. zucchini, halved
3 oz. cherry tomatoes
3 oz. radish, halved
3 oz. yellow pepper, cubed
3 oz. onions, chopped

2 tsp. olive oil
2 tsp. lemon juice
2 tsp. garlic, minced
2 tsp. oregano

Instructions

1. Preheat the grill to medium heat and prepare vegetables.

2. Once vegetables are prepped, thread them onto wood or metal skewers.

3. Once skewers are made, mix the marinade together by combining olive oil, lemon juice, garlic, and oregano in a small bowl.

4. Brush the marinade over the skewered vegetables until they're covered.

5. Once the grill is hot and the skewers are oiled up, place them on the grill and cook for 12 to 18 minutes, rotating them occasionally.

6. Once vegetables are tender, remove them from the grill, let cool for a few minutes, then serve, and enjoy!

Tip

If you don't have a grill, you can also make these skewers in the oven by roasting them at 400°F for the same amount of time, rotating occasionally until tender.
