1. Preheat the grill to medium heat, between 350°F to 375°F.
2. While the grill heats, chop pepper, celery, mushrooms, cucumber, garlic, and onions.
3. Once chopped, toss the veggies into a blender, along with spices and shredded cheese.
4. Once your "stuffing" is blended together, slice the pork tenderloin down the center, ensuring not to go all the way through.
5. Once the pork tenderloin is "butterflied," place half of the stuffing in the center of the pork tenderloin.
6. Once the pork tenderloin is stuffed, roll it closed and fasten it together with cooking twine.
7. Once the pork tenderloin is tied together, place it on some foil and top it with the remaining stuffing.
8. Once the pork tenderloin is ready, wrap the foil wrapper around it and place it on the preheated grill.
9. Grill wrapped pork tenderloin for 20 to 30 minutes, or until no longer pink and has an internal temperature of at least 160°F, be sure to rotate the pork every 5 minutes.
10. Once cooked, remove from heat and let cool for 3 to 5 minutes.
11. Once cooled, divide it into 4 servings, sliced into wheels.
