Grilled Shrimp & Tomato Pasta

Our flavourful and healthy Grilled Shrimp & Tomato Pasta is a versatile dish that can be made with any noodle, perfect for supporting any weight loss journey — enjoy!

Ingredients

20 oz. uncooked shrimp
16 oz. cherry tomatoes
4 oz. pasta
2 oz. parmesan cheese
2 tbsp. fresh basil

1 tbsp. olive oil
2 tsp. butter
1 tsp. garlic powder
Dash of salt
Dash of pepper

Instructions

1. Preheat the grill to 375°F and bring salted water to a boil in a pot.

2. While the grill heats and the water comes to a boil, put tomatoes and shrimp on separate skewers, brush with olive oil, and sprinkle with garlic powder, salt, and pepper.

3. Once the water is boiling, cook the pasta of choice according to the package instructions.
4. Once the grill is hot, place the skewers on the gates, cooking the tomatoes for 4 to 6 minutes and the shrimp for 6 to 8 minutes, flipping both every couple of minutes.

5. Once pasta is cooked, drain it, but keep 2 to 4 oz. of the pasta water in the pot.

6. Add butter, pasta, and cheese to the pasta water in the pot, stirring to combine.

7. Once the tomatoes are roasted and the shrimp is fully cooked, remove them from the grill, and then carefully remove them from the skewers.

8. Divide the pasta into bowls and top with the tomatoes and shrimp, garnish with the basil, and enjoy!
