Cauliflower and Cheddar Soup |

Spray a saucepan with fat-free, nonstick cooking spray. Lightly sauté onion. Add chicken broth, water, and cauliflower. Bring to a boil. Add spices and reduce heat. Cover and simmer for 20-25 minutes or until cauliflower is soft. Transfer contents of the saucepan into a blender and puree until smooth. Return to saucepan. Add cheddar cheese. Stir until cheese melts. Serves four. One serving equals 1/3 vegetable, ½ dairy, 1 free exchange. | ||
