| Preheat oven to 400°F. Cut tomatoes in half horizontally. Place in a nonstick baking pan cut-side up. Season with black pepper. Bake for 10 minutes. Blend garlic, parsley, and bread crumbs. Remove tomatoes from oven and top with bread crumb mixture. Sprinkle with olive oil. Bake for an additional four to five minutes or until topping forms a crust.
Serves four. One serving equals 1 vegetable, ¼ starch, and ½ fat. | |
